Recipe for Ricotta & Herbs Agnolotti
500 grams all purpose flour
4 whole eggs
75 grams egg yolks
Combine all ingredients in a standing mixer and work the dough until smooth. Cover with plastic wrap and let rest in the refrigerator for an hour before utilizing.
The recipe for the filling is:
500 grams ricotta cheese
50 grams parmigiano reggiano
½ tbsp chopped parsley
½ tbsp chopped chives
Meyer lemon zest to taste
Salt & pepper to taste
Combine all ingredients. Put the filling in a piping bag and refrigerate.
